Okra-Rice Pilaf
Yield: 6 servings
- 2 cups cooked rice
- 2 tablespoons butter, melted
- 6 slices bacon, cooked and crumbled
- 2 tablespoons bacon drippings
- 2 cups sliced okra
- 1 medium onion, chopped
- 1 green pepper, chopped
- Salt and pepper to taste
- Combine rice and butter. Set aside.
- In reserved bacon drippings, sauté okra, onion and green pepper until tender.
- Combine rice, bacon, salt, pepper and okra mixture. Pour into 1 ½-quart baking dish. Cover.
- Bake at 350° for 30 minutes.
