Okra-Rice Pilaf

Yield: 6 servings

  • 2 cups cooked rice
  • 2 tablespoons butter, melted
  • 6 slices bacon, cooked and crumbled
  • 2 tablespoons bacon drippings
  • 2 cups sliced okra
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • Salt and pepper to taste
  1. Combine rice and butter. Set aside.
  2. In reserved bacon drippings, sauté okra, onion and green pepper until tender.
  3. Combine rice, bacon, salt, pepper and okra mixture. Pour into 1 ½-quart baking dish. Cover.
  4. Bake at 350° for 30 minutes.
