Harriet’s Pork Tenderloin

Yield: 12 servings

  • 3 pork tenderloins (salt and pepper)
  • ½ cup butter, divided
  • ¾ cup apricot jam
  • 1 cup brown sauce (may use our BROWN SAUCE recipe, or Knorr Swiss Hunter Brown Sauce mix with mushrooms)
  • Fresh parsley to garnish
  1. Season tenderloins with salt and pepper.
  2. Sauté in ¼ cup butter 5-10 minutes, browning all sides. Remove tenderloins.
  3. Add remaining butter and apricot jam.
  4. Place meat in shallow roasting pan. Pour apricot sauce over meat.
  5. Bake at 350° for 40 minutes, basting often.
  6. Add brown sauce to apricot sauce, mixing well.
  7. Bake an additional 10 minutes.
  8. Garnish with fresh parsley. Serve with sauce.
