Harriet’s Pork Tenderloin

Yield: 12 servings
- 3 pork tenderloins (salt and pepper)
- ½ cup butter, divided
- ¾ cup apricot jam
- 1 cup brown sauce (may use our BROWN SAUCE recipe, or Knorr Swiss Hunter Brown Sauce mix with mushrooms)
- Fresh parsley to garnish
- Season tenderloins with salt and pepper.
- Sauté in ¼ cup butter 5-10 minutes, browning all sides. Remove tenderloins.
- Add remaining butter and apricot jam.
- Place meat in shallow roasting pan. Pour apricot sauce over meat.
- Bake at 350° for 40 minutes, basting often.
- Add brown sauce to apricot sauce, mixing well.
- Bake an additional 10 minutes.
- Garnish with fresh parsley. Serve with sauce.
